BURRATA PIZZA PIE

Unknown - Thursday, October 01, 2015

INGREDIENTS

  • 1 recipe Homemade Pizza Dough
  • 1/2 cup pizza sauce
  • 8 ounces burrata cheese
  • 1 3-ounce package prosciutto
  • handful of fresh basil, fried or torn into pieces
  • red pepper flakes

INSTRUCTIONS

  1. Pre-heat your oven to 500 degrees.
  2. Thirty minutes before cooking the pizza, put your pizza stone in the oven.
  3. Stretch out your pizza dough using your hands in a circular motion, then lay it on a flat surface and flatten it out using a rolling pin. If you have a pizza peel, sprinkle some flour on it and place the stretched out dough on the peel.
  4. Once your dough is flat and ready to be heated, use a spoon to spread the pizza sauce all around the dough leaving a little bit for the crust.
  5. Pop your pizza peel in the oven and slide it over the stone for ten minutes.
  6. After ten minutes, pull out the pizza and sprinkle the creamy burrata on top of the pie.
  7. Put your pizza back in the oven for another 3-4 minutes.
  8. When the cheese is just starting to melt, take it out and top with prosciutto and the fried basil, salt, and red pepper flakes. Cut into 6-8 slices and serve immediately.

Homemade Pizza Dough

INGREDIENTS

  • 1 cup plus 1 tablespoon 00 flour
  • 1 cup plus 1 tablespoon and 2 teaspoons all-purpose flour
  • 1 teaspoon fine sea salt
  • 3/4 teaspoon active dry yeast
  • 1 teaspoon extra-virgin olive oil

INSTRUCTIONS

  1. In a large bowl, combine flours and salt.
  2. In a small mixing bowl, stir together about 1 cup lukewarm tap water, the yeast and the olive oil. Pour it into flour mixture. Knead with your hands until just combined, approximately 2-3 minutes, then let the mixture rest for 15 minutes.
  3. Knead the rested dough for 3 minutes until smooth. Cut the dough into 2 equal pieces and shape each into a ball. Place on a heavily floured surface, cover with dampened clean kitchen towel, and let rest and rise for 3 to 4 hours at room temperature. Alternatively, if you're making the dough a day before use, you can let it rest and rise for 8 to 24 hours in the refrigerator.
  4. To make pizza, make sure the dough is at room temperature and place each dough ball on a heavily floured surface and use your fingers to stretch it, then your hands to shape it into rounds or squares. Top and bake.

Pizza Nachos

Unknown - Sunday, May 25, 2014

Ingredients

FOR THE GARLIC CREAM SAUCE

1-½ Tablespoon Unsalted Butter
½ Tablespoons Olive Oil
2 cloves Garlic, Minced finely
3/4 cups Heavy Cream
1 pinch Salt
¼ cups Parmesan Cheese, Grated

FOR THE PIZZA NACHOS

4 cups Your Favorite Crispy Tortilla Chips
1/4 cups Garlic Cream Sauce (Recipe Included)
2/3 cups marinara sauce (or pizza sauce)
handful of fresh basil, torn
handful of parsley, chopped
1 cup Mozzarella Cheese, Shredded
1 cup Cheddar Cheese, Shredded

Instructions

Start by making your sauce. Begin by melting the butter, along with the olive oil on medium to low heat. Once melted, toss in the minced garlic, stir. Turn to Medium heat, Add in the cream and stir until it comes to a boil. Add the salt along with the parmesan cheese, and continue stirring. The sauce will thicken pretty quick, so continue to stir. Once the sauce is thickened, remove from the burner, and set aside.
When you are ready to make your nachos, preheat your oven to 400ºF.
I used a cookie sheet but any oven-proof dish will work . First add your chips. Drizzle half of the garlic cream sauce all over the chips. Spoon half of the marinara onto chips. Add half of the shredded cheese & half of the herbs. Add another layer of chips and add the remaining cream sauce, marinara sauce and cheese. Bake until the cheese is nice and bubbly 5-7 minutes. Remove from oven and top with the remaining fresh herbs.

Cauliflower Pizza Crust

Unknown - Thursday, May 01, 2014

Ingredients

  • 1 medium head cauliflower (about 1 lb 12 oz)
  • 1/4 cup finely shredded parmesan (1 oz)
  • 1/4 cup finely shredded mozzarella (1 oz)
  • 1/4 tsp salt
  • 1 large egg
  • 1 clove garlic, minced
  • Topping:
  • 1/2 Tbsp homemade or store-bought pizza sauce, or more or less to taste
  • 1 to 1 1/2 cups shredded mozzarella
  • Desired toppings, such as fresh grape tomatoes, basil, oregano, olives, mushrooms etc.

Directions

Place a pizza stone in oven and preheat oven to 450 degrees. Spray a large piece of parchment paper with non-stick baking spray and set aside.

Wash cauliflower, cut off florets, dry thoroughly and add half of the cauliflower to food processor and process until finely chopped, about 30 seconds. Transfer chopped cauliflower to a microwave safe bowl. Add remaining cauliflower to food processor and again, process until finely chopped, about 30 seconds. Add that cauliflower to bowl with other cauliflower (you should now have about 2 1/2 - 3 cups finely chopped cauliflower). Cover bowl with microwave safe plastic wrap and heat cauliflower in microwave 4 minutes on HIGH power. Pour cooked cauliflower onto a clean tea towel and allow to cool. Once cauliflower is cool enough to handle, wrap cauliflower in tea towel and wring moisture from cauliflower (about 1/3 cup or so).

Return strained cauliflower to bowl, add parmesan and mozzarella cheese, salt, egg, and garlic and toss mixture with your hands until evenly combined.

Pat mixture into an even round, about 11 to 12-inches, on prepared parchment paper (keeping it snuggly pressed together). Using a pizza peel, transfer crust on parchment to pizza stone in oven and bake 9 - 11 minutes, until golden brown.

Remove from oven and top with pizza sauce, mozzarella and desired toppings (if using fresh herbs, add them after cooking pizza). Return to oven and bake 5 - 7 minutes longer until cheese has melted and is slightly golden. Allow to cool several minutes then cut into wedges. Serve warm.
